Safe to say, I’m pretty obsessed with avocado. Every time I go to the grocery store, I buy avocados. Plus, I have avocado toast almost every morning for breakfast. I take a slice of Ezekial bread and mash 1/2 of a Hass avocado on top then go wild with toppings.

The fun part, am I right?

Never been a fan of PB&J but mashed avocado on toast? YES PLEASE.

Of course, I also like guacamole. But I don’t know man, there’s just something delicious about bread and mashed avocado! Mmm…

As you can imagine, I’ve become extra creative with my ‘cado game after all this time of having avocado toasts for breakfast at home and at brunch. Which brings me to this EPIC recipe!

Miami-Inspired Avocado Toast? Tropical Avocado Toast? No matter what you call it, it’s pretty much my favorite ways to enjoy avocado toast!

Life can’t get any better than this!

The mix of flavors with each one of these is out of this world and hopefully will help you feel a little like you’re on vacation in Miami. ;)

The recipe below is more like a guideline for these specific 6 toasts. Feel free to make more or less as you wish. If you’re hosting brunch, make 20 of these! If you’re making breakfast for yourself, make 1 (or 3) of them. Heck, make one every week for a month! Imagine how fun to wake up to a new tropical breakfast every day.

Ingredients
  • 6 slices multigrain bread toasted
  • 3 Hass avocados peeled, seeded, use 1/2 per toast
  • 1 egg sunny side up or poached
  • 1/2 cup mango cut in chunks
  • Trader Joe's Chili-Lime Seasoning (or Tajin)
  • 3 slices sweet plantains cooked
  • feta cheese crumbled
  • 2 ounces crab meat
  • 1 tablespoon melted butter
  • cilantro roughly chopped
  • Trader Joe's Everything Bagel Seasoning
  • 2 scallions thinly sliced
  • red pepper flakes
  • 2 slices smoked salmon thinly sliced
  • capers
  • lime juice, olive oil, salt and pepper to taste
Instructions
Avocado Toast with Egg
  1. Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with egg and black pepper. 

Avocado Toast with Mango
  1. Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with mango chunks and chili-lime seasoning or Tajin.

Avocado Toast with Sweet Plantains
  1. Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with sweet plantains and feta cheese.

Avocado Toast with Crab
  1. Mash 1/2 avocado. Add lime juice and salt. Mix crab meat with melted butter. Spread toast with mashed avocado. Top with crab meat and cilantro.

Avocado Toast with Everything Bagel Seasoning
  1. Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with everything bagel seasoning, scallions, red pepper flakes, and a drizzle of olive oil. 

Avocado Toast with Smoked Salmon
  1. Mash 1/2 avocado. Add lime juice and salt. Spread toast with mashed avocado. Top with smoked salmon, capers, and a drizzle of olive oil.
